Amy E's Organic Biscotti is baked in Moscow, Idaho. I started baking desserts and wedding cakes to sell locally a few years ago after building my commercial kitchen. I've baked my biscotti for special orders for the past 3 years. At the end of last year, I decided to have my kitchen certified to produce it organically and introduce it to people beyond my immediate community.
My biscotti is the hard and crunchy Italian-style cookie. Each log of dough is formed by hand before being baked for the first time. After cooling a little, it is then cut into slices before being baked a second time. After cooling, they are bagged and put into boxes to ship. In my opinion, the best thing about baking organic products is the knowledge that the reason it's going to taste good at the end is because quality ingredients went in at the beginning. It's not about who has the best combination of chemicals to make it taste like chocolate, butter, and vanilla were used. Or that the orange color of an orange flavored cookie came out of a tube of paste or bottle of powder and not from a real orange. I'm very excited about having the opportunity to produce biscotti for consumers who will appreciate the extra care and effort that goes into organic food products..
