Amy E's Bakery is located in Moscow, Idaho. I started baking desserts and wedding cakes to sell locally after building my commercial kitchen in 2004. In early 2006, I decided to have my kitchen certified to produce organic biscotti to sell to people beyond my immediate community. I have since added cookies and toffee to the list of products.
My biscotti is the hard and crunchy Italian-style cookie. Each log of dough is formed by hand before being baked for the first time. After cooling a little, it is then cut into slices before being baked a second time. After cooling, they are bagged and put into boxes to ship.
The toffee is one of my favorite things on the site. I made it for friends and family for years before adding it as a product. It's made from only a few ingredients and just dissolves into buttery sweetness when eaten.
The cookies are the newest additions and they are really good. I worked on the chocolate chip recipe for several months before I came up with the final cookie. It had to stay soft after it was baked, have a lot of flavor, and be loaded with chocolate chips. The cranberry walnut cookie started with the same base and then went in a totally different, but fantastic, direction.
In my opinion, the best thing about baking organic products is the knowledge that the reason it's going to taste good at the end is because quality ingredients went in at the beginning. It's not about the best combination of chemicals to make it taste like chocolate, butter, and vanilla were used. The fresh and natural food that my family prepared and ate while I was growing up on my grandparent's farm in Oregon was wonderful. Some of my favorite memories include a slice of cake, piece of pie, or warm cookie. Made from scratch and truly comforting, those desserts from 20+ years ago are a large part of my desire to share some of my favorite new treats with others.
